Ingredients
- 4 boneless skinless chicken breasts
- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1 cup grated parmesan cheese
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Prep the chicken: Season chicken breasts with salt, pepper, and Italian seasoning on both sides.
- Sear the chicken: Heat olive oil in large skillet over medium-high heat. Add chicken and cook 5-7 minutes per side until golden and cooked through. Remove and set aside.
- Make the sauce: In same pan, add minced garlic and cook for 1 minute until fragrant.
- Add cream and tomatoes: Pour in heavy cream and add sun-dried tomatoes. Stir to combine and bring to a gentle simmer.
- Add cheese: Stir in parmesan cheese and let it melt into the sauce.
- Wilt the spinach: Add fresh spinach and cook until wilted, about 2 minutes.
- Finish: Return chicken to pan and coat with sauce. Cook for 2-3 minutes to heat through. Serve immediately.
