Creamy Tuscan Chicken

Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 cup grated parmesan cheese
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Prep the chicken: Season chicken breasts with salt, pepper, and Italian seasoning on both sides.
  2. Sear the chicken: Heat olive oil in large skillet over medium-high heat. Add chicken and cook 5-7 minutes per side until golden and cooked through. Remove and set aside.
  3. Make the sauce: In same pan, add minced garlic and cook for 1 minute until fragrant.
  4. Add cream and tomatoes: Pour in heavy cream and add sun-dried tomatoes. Stir to combine and bring to a gentle simmer.
  5. Add cheese: Stir in parmesan cheese and let it melt into the sauce.
  6. Wilt the spinach: Add fresh spinach and cook until wilted, about 2 minutes.
  7. Finish: Return chicken to pan and coat with sauce. Cook for 2-3 minutes to heat through. Serve immediately.
