Classic Tiramisu

Authentic Italian tiramisu with espresso and mascarpone

Tiramisu

Ingredients

  • 6 egg yolks
  • 3/4 cup sugar
  • 1 1/3 cups mascarpone cheese
  • 2 cups heavy cream
  • 2 cups strong espresso, cooled
  • 24 ladyfinger cookies
  • Cocoa powder for dusting

Instructions

  1. Whisk egg yolks and sugar until thick and pale
  2. Add mascarpone and beat until smooth
  3. Whip cream to stiff peaks, fold into mascarpone mixture
  4. Quickly dip ladyfingers in espresso
  5. Layer dipped ladyfingers in dish
  6. Spread half of mascarpone mixture over cookies
  7. Repeat layers
  8. Dust with cocoa powder, refrigerate 4 hours
